A healthy diet is crucial to a healthy body. You can exercise all you want, but if your diet doesn’t cover all the necessary bases, you’re not benefiting as much as you could from all your hard work.
This is something that I have realized recently, as two slices of toast slathered with peanut butter (and chocolate) washed down by at least eight cups o’ the good stuff with a little French vanilla creamer and hot cocoa hasn’t exactly contributed to the summer bod’ I’m trying to fit in just under the wire. That Oregon Life‘s nutrition counselor buddies over at My Path Wellness told me to give cauliflower a try as a substitute for delicious carbs. So I started researching healthy breakfast recipes over on Delish.com, and I have to tell you about this thing called “cauliflower.”
If you’re like me, “cauliflower” is practically a foreign word, right alongside those mysterious things called “broccoli” and “asparagus.” Sure, we’ve had the occasional vegetable, but why eat vegetables when you can eat meat? Honestly. There’s no contest.
But here’s the thing about cauliflower: it can be transformed into so many different things. One or two of the following might surprise you, but they’re all pretty cool. Click on the recipe name for instructions for each breakfast dish!
They’re like little patties of flaky potatoes, but they’re made out of cauliflower! According to the recipe, you can also add at least cheese and onions, but I’d wager you could get a little wild with it.
A carb-free variation of bread made out of cauliflower!
Someone took cauliflower toast and added an avocado. Mind = blown.
Muffins are fantastic. They’re the dessert of breakfast. Well, surprise! You can make them out of cauliflower! The recipe includes meat and veggies, but I’d wager you could occasionally forego those and throw some blueberries in there.
Lasagna – Completely thought this was a lasagna when I first saw it. It looks like lasagna. You know what? I’m going to call it Cauliflower Breakfast Lasagna.
Just wrap your mind around that. Breakfast. Pizza. BREAKFAST. PIZZA. No other words are necessary.
